Coconut and lime is one of those combination that becomes a total to-go when nothing comes into mind.

for 24 cm pan​

  • 1 cup almonds, soaked for 10 h
  • 10 soft dates
  • 200 ml almond or another kind of dairy-free milk
  • 200 ml full fat coconut milk
  • 1/2 cup light brown sugar
  • 200 gr coconut flakes
  • zest of 2 limes1 ripe avocado
  • 1 tbsp agar or gelatin powder
  • 1 tsp of coconut oil
  • pinch of salt


  • Blend almonds and dates in a food processor or a manual meat grinder. Add a pinch of salt and 1 tsp of coconut oil.
  • Transfer mixture into a greased with coconut oil spring form pan, press well to the bottom and put in the fridge.
  • Bring milk, coconut flakes, sugar, agar powder and lime zest to a boil. It needs just about a minute for the agar to activate its gelling effect.
  • Then remove from heat, let cool a bit and then add the blended avocado.
  • Pour the cream on the base, flatten the surface and decorate with lime slices.
  • Refrigerate for at least an hour.

Tips: The tart freezes very well and can be frozen for up to 1 month. You can use vanilla powder instead of lime for a milder and sweeter taste.
